A ramen bar's window and small terrace table by a bowl sign, titled 'Susuru'

Susuru

There’s a ramen bar in the middle of Leuven’s city centre, half hidden behind a bus stop, that feels like stepping into a little corner of Tokyo. Susuru is the work of Kris Nunes, who left a career in aviation, went to train in Yokohama and then Singapore, and came back to Leuven to do one thing properly. The menu is short on purpose. You sit close and watch the chef work the broth in the open kitchen, and on a warm evening there’s a cosy little terrace tucked away at the back. We come for a bowl of tonkotsu the moment the weather turns.

Save it for the first cold evening, and tag the person you’d share a table with.
